Instructions
  1. In a large skillet, melt 4T butter. Add frozen corn and sprinkle with one teaspoon of sugar. Cook on medium high heat until corn begins to brown. Stir frequently browning as much of the corn as possible. Add water, Knorr bouillon, and cumin. Bring to a boil, stirring to get all the brown bits from the bottom of pan. Place mixture in blender and process for a minute or two. Add 4T butter and 1/4 cup of lard, and process until melted.
  2. In a large bowl, add masa harina, baking powder, and salt. Mix to combine, then add mixture from blender. Pour 1/2 cup hot water into blender and process to clean the sides of blender. Pour into bowl with the rest of the ingredients. Work the masa, first with a wooden spoon, then with your hands - squishing the masa between your fingers until there is no dry masa and it is all smooth. Place in Ziploc bag and refrigerate overnight or up to 3 days.
